Hi Dan!

We are doing not too bad...a few aches and pains because of the weather going up and down weather......but nothing bad....

I did get my last blood draw back and they said I am out of the woods with a low potassium and it is now 4.1 which is normal for me! YAY!!!!!!

I can now have small amounts of cottage cheese and some butter but in small portions with other food...I don't want to shock my system after 3 months on nearly no dairy products....I still wont drink any milk from a carton but I can mix fat free skim milk in with mashed taters...If I really want ice cream I may try the frozen yogurt or the Rice Dream ice cream...

And BTW that lunch burrito you posted looks really good.

Sadly the recipe that Littlestar had on here for the pasta with the spinach and cheese...I couldn't even find half of the ingrediants here in my town...

Irish Soda Bread

You gotta love Martha Stewart for dressing up a traditional Irish bread and giving it a little twist . By adding egg, sugar, caraway seeds, and butter to a traditional Irish soda bread recipe, you create a loaf that is fit for a Sunday breakfast or brunch. Wrapped well with plastic wrap, it can be stored at room temperature until the last crumb is eaten. Like all Irish soda breads, this freezes well.

Heat oven to 350°. Line a baking sheet with parchment paper; set aside. In a large bowl, whisk together flour, sugar, salt, baking powder, and caraway seeds until well combined.

Using a pastry cutter or two knives in scissor fashion, cut in butter until the mixture feels like coarse meal. Stir in raisins until evenly distributed.

In a small bowl, whisk together buttermilk, egg, and baking soda until well combined. Pour buttermilk mixture into the flour-and-butter mixture all at once, and stir with a fork until all the liquid is absorbed and the mixture begins to hold together. It should resemble a rough biscuit dough. Using your hands, press the dough into a round, dome-shaped loaf about 8 inches in diameter. Lift the loaf from the bowl, and transfer it to the prepared baking sheet.

In a small bowl, mix the egg yolk and cream together. With a pastry brush, brush the egg wash over the loaf. With a sharp knife or razor, incise a cross, about 1/2 inch deep, into the top of the loaf. Transfer to the oven. Bake, rotating halfway through, until it is deep golden brown and a wooden skewer comes out clean when inserted into the center, about 70 minutes. Remove from oven, and transfer bread from the baking sheet to a wire rack to cool.

Morning all.

Just thought I'd stop in for a quick cup while I get ready for work.
Packing the saddle bags, it 45 out there, so going to be a chilly ride this morning.
It'll be worth it this afternoon though, suppose to be near 70.

Just got in from bowling, and I'll tell you, the alley was as close to hell as I've ever got. It's been int he 70's here today, and even when we were leaving, it was still close to 60. So you have 30 teams of 4 guys each, in an enclosed area playing, and NO AIR CONDITIONING!
The cheap a$$ ba***rds won't turn on the air until next month.

I need a couple of these, so I made enough for everyone:

Mine's minus the lemon, of course..... Wink

The team didn't do to well tonight, we lost all 7, and I did just barely hit a 700 series. But it's Friday night bowling....and I can sleep in tomorrow!
